Powerful Plant-Based Protein Bars
INGREDIENTS
1 Cup Raw Cashews (Soaked for 6-8 Hrs)
7-8 Whole Dates (Soaked in Warm Water 10-15 Minutes)
1/2 Tsp Sea Salt
1 Tsp Pure Vanilla Extract
4 Tbsp Cocoland Extra Virgin Coconut Oil (Melted)
1/4 Cup Pumpkin Seeds
1/4 Cup Hemp Seeds
1/4 Cup Chia Seeds
1/4 Cup Chocolate Chips
1/2 Cup Pecans
RECIPE INSTRUCTIONS
In a food processor add cashews & pulse until they are finely chopped.
Add dates pulse until they are slightly broken up.
Blend in coconut oil, vanilla, & salt until the ball is formed.
Line a square baking dish with parchment & evenly spread the mixture.
Sprinkle with pumpkin seeds, hemp seeds, chia seeds, & optional chocolate chips gently into the mixture.
Place in the fridge for 60 minutes before cutting into squares.
Individually wrap squares for an easy grab and go option. Enjoy!
