Powerful Plant-Based Protein Bars

INGREDIENTS
  • 1 Cup Raw Cashews (Soaked for 6-8 Hrs)
  • 7-8 Whole Dates (Soaked in Warm Water 10-15 Minutes)
  • 1/2 Tsp Sea Salt
  • 1 Tsp Pure Vanilla Extract
  • 4 Tbsp Cocoland Extra Virgin Coconut Oil (Melted)
  • 1/4 Cup Pumpkin Seeds
  • 1/4 Cup Hemp Seeds
  • 1/4 Cup Chia Seeds
  • 1/4 Cup Chocolate Chips
  • 1/2 Cup Pecans
RECIPE INSTRUCTIONS
  • In a food processor add cashews & pulse until they are finely chopped.
  • Add dates pulse until they are slightly broken up.
  • Blend in coconut oil, vanilla, & salt until the ball is formed.
  • Line a square baking dish with parchment & evenly spread the mixture.
  • Sprinkle with pumpkin seeds, hemp seeds, chia seeds, & optional chocolate chips gently into the mixture.
  • Place in the fridge for 60 minutes before cutting into squares.
  • Individually wrap squares for an easy grab and go option. Enjoy!
