Roasted Mashed Cauliflower
INGREDIENTS
1 Whole Cauliflower (Cut into Smaller Florets)
5-6 Garlic Clove
2 Tbsp Cocoland Extra Virgin Coconut Oil (Melted)
1 Tbsp Olive Oil
4 Tbsp Canned Coconut Milk
1/3 Cup Chopped Chives
1 Tsp Sea Salt
+ Pepper to Taste
RECIPE INSTRUCTIONS
Preheat oven to 400 degrees Fahrenheit. Put cauliflower into medium mixing bowl, add coconut oil, sea salt and toss.
Spread cauliflower over large rimmed baking sheet to roast.
Place the garlic cloves on aluminum foil, sprinkle with olive oil and a pinch of salt and close the ends of the foil to completely enclose the garlic.
Put the cauliflower and foil packet into the oven to bake for about 30-35 minutes (check the garlic as it may take less time).
Place roasted cauliflower and roasted garlic cloves food processor. Pulse until garlic and cauliflower become smooth.
Add olive oil, coconut milk, chives, salt and pepper to taste and pulse until well combined.
