Roasted Mashed Cauliflower

  • 1 Whole Cauliflower (Cut into Smaller Florets)
  • 5-6 Garlic Clove
  • 2 Tbsp Cocoland Extra Virgin Coconut Oil (Melted)
  • 1 Tbsp Olive Oil
  • 4 Tbsp Canned Coconut Milk
  • 1/3 Cup Chopped Chives
  • 1 Tsp Sea Salt
  • + Pepper to Taste
  • Preheat oven to 400 degrees Fahrenheit. Put cauliflower into medium mixing bowl, add coconut oil, sea salt and toss.
  • Spread cauliflower over large rimmed baking sheet to roast.
  • Place the garlic cloves on aluminum foil, sprinkle with olive oil and a pinch of salt and close the ends of the foil to completely enclose the garlic.
  • Put the cauliflower and foil packet into the oven to bake for about 30-35 minutes (check the garlic as it may take less time).
  • Place roasted cauliflower and roasted garlic cloves food processor. Pulse until garlic and cauliflower become smooth.
  • Add olive oil, coconut milk, chives, salt and pepper to taste and pulse until well combined.
